Fish: Fish Fry All Methods

Equipment

  • 1 Fry pan optional
  • 1 Air Fryer optional
  • 1 Pan for baking optional
  • 1 Deep kettle for Deep Frying optional

Ingredients

  • 1 LB FISH - any kind works great
  • 1/2-1 cup Mr. Walleye Breading Mix
  • Oil - enough to coat the fry pan, deep enough for the fyer or light enough for the air fryer
  • 1 Beer Can or bottle. Used for beer batter. optional

Instructions

Bake or Pan Fry

  • Moisten fish with water. Take out of water and let drip. Place in bag with Mr. Walleye.
  • Coat with Mr. Walleye Breading Mix by shaking the bag or by using a shallow pan and turning the fillets a few times.
  • Let rest 10–30 minutes, then coat again.
  • Bake or pan fry until golden brown and fish reaches the desired internal temperature. Hot pan - Oil temp 375 consistently for best results.
  • Take the fish out one layer at a time. Don't pile on the plate.
  • Don't crowd your cooking in the oil to prevent a drop in oil temperature

Air Fry

  • For the crispiest results:
    Preheat your air fryer. Lightly spray the air fryer basket with cooking oil. After coating with Chef Robert's, lightly mist the fish with cooking oil. This helps create a golden, crispy crust. Arrange fish in a single layer. Do not overcrowd. Flip halfway through cooking and lightly spray the second side. Cook until golden brown and the proper internal temperature is reached.

Deep Fry

  • Heat the oil to 375 degrees F., same as for pan frying. The only difference is you use enough oil to float the fish.
  • As long as you cook with low cholesterol oil, get it nice and hot, and take the fish out as soon as they're done, they won't taste like they've been soaking in oil.
  • Cut fillets into 3" pieces and place in cold water. Take fish out of the water, let some water drip off, and drop them into the plastic bag with the dry batter. Shake gently until throughly coated.
  • Open 1 package of Mr. Walleye Breading and Batter Mix and put in a bowl big enough to hold the batter, a can of beer or less, and a few fish pieces.
  • Mix the batter and beer until the batter is like thick soup. Add less or more beer based on how much breading mix you have.
  • With tongs or a fork, drop the coated pieces into the beer batter. Lift out of beef batter, let excess drip off and put into the hot oil.
  • The fish should come right up and float as they cook. Make sure the fish cooks thoroughly on both sides. Some flip over as they float in the oil, and others you may have to turn yourself. Turn the fish once. It doesn't take long until they're golden brown and done.

Fish: Salmon

Equipment

Ingredients

  • 1-2 filet Salmon
  • 1/2 cup Mr. Walleye Breading Mix Approximate portion of breading mix. Use as much as needed based on size of filets.
  • Oil

Instructions

  • Wet Salmon with water and shake off excess
  • Dip and shake in Mr. Walleye Breading Mix
  • Place in fry pan that has hot oil in it. 375 consistent temp - don't crowd in pan
  • 3-5 min per side based on the size of filet
  • Remove and let rest a few minutes
  • Enjoy

Equipment

  • 1 Fry pan

Ingredients

  • 1 lb Catfish
  • 1 cup Mr. Walleye Breading Mix
  • Oil

Instructions

  • Wet Catfish and shake off excess
  • Dip and shake in Mr. Walleye Breading Mix
  • Rest the filets on a tray for 10-30 min
  • Deep Fry or Pan Fry Hot Oil
  • Don't overcrowd the fryer so that you maintain heat at 375
  • Remove when at the desired temperature
